chocolate rice pud

Reading about Elderfairy’s new swings and the fact that it appeared to be the start of summer today inspired a new ‘life skills’ lesson: cleaning swings/slide/rocky thing. There were no complaints, think it was quite satisfying as the winter mildew stuff came off fairly easily :) Then they moved on to the outside table and chairs and we had our first outdoors meal of the season there at lunchtime. Tattie soup with nettles chopped in to it (it’s actually quite nice – just like any greens) – another first this year. I do notice plants are slower to come on this year with the longer winter and coldness. I’m hoping this means a hot summer?? Always hoping for that.

Did some more triffiding in the afternoon out in the sun and were too hot for jackets on our walk – brilliant :) We veganised a recipe from ‘French Women Don’t Get Fat‘ – chocolate rice pudding. Was extremely rich, but good, quite different from anything we usually eat and we all enjoyed making it. Here’s our vegan version:
500ml soya milk
50g. sugar
half teaspoon vanilla extract
pinch of salt
200g pudding rice
85g. dark chocolate (80% best), broken into small pieces
Bring milk, sugar and salt to the boil then add the rice. Stir occasionally while cooking for about 20 minutes – add more milk if too sticky. Stir in vanilla. Divide between 4 ramekins and insert the chocolate pieces into the middle and push down with a spoon. Leave at room temperature while you eat the rest of your dinner and the chocolate will all be melty and gorgeous by then…
